Linux Software Raid help Ubuntu 8.04

I have a desktop server with three SCSI 250gb Harddrives. I want to install ubuntu 8.04 onto them, but the problem is that linux won't let me setup a RAID. I am out of PCI slots and I can't sacrifice a NIC. The problem and needed workaround is due to the fact that in the manual formatting, there is no "physical volume for raid setup" option. Instead only ext3, RFS and a few other exotic filesystems are available for installation on a per disk basis.
I am also unable to reach the terminal while installing from Live CD. Therefore, I can't fix this via terminal, I cannot fix this with a manual formatting/partitioning, and I can't install a hardware RAID. My bios allows me to setup Raid on the bus, but ubuntu8.04 can't see it.
I need a software raid solution. Perhaps an ext3 linux software raid tool so that I can partition everything before installing ubuntu with the live CD.
