setup /domainprep (from the exchange media)
You can also specify the domain you want to prep - just run it with /? to see the options.

Yes - you would run it in the child domain.
(full intructions; 'prepare the domain' section: http://technet.microsoft.com/en-us/library/bb288907.aspx)

Make sure you have permissions on both domains when you do this.

I see what you mean - try using Powershell as a test to see id this is just a management console thing:

$password = Read-Host "Enter password" -AsSecureString
New-mailbox -UserPrincipalName chris@contoso.com -alias chris -database "Storage Group 1\Mailbox Database 1" -Name ChrisAshton -OrganizationalUnit Users -password $password -FirstName Chris -LastName Ashton -DisplayName "Chris Ashton" -ResetPasswordOnNextLogon $true

got the solutions it was verry simple

Open your E2K7 management console and right click on "Recipient Configuration" and select Modify Recipient Scope.  On the next window select "View all recipients in the forest".  This will allow you browse your Child domains while creating mailboxes for either existing or new users.
