UML diagrams

What is the name of the part of a UML diagram that is concerned with scenarios and what the system actually does instead of how it is done?

You could be talking about Collaboration diagrams, often shown with swim lanes.  Or you could be talking about Sequence diagrams, which show time-ordered sequence of events and responses.

Marklorenz is correct in the second post. I would use activity diagrams to show: "what the system actually does instead of how it is done"
