embed text in picture file

Is it possible to embed text into a picture file.  We have a lot of projects and take pictures for documentation.  It would be nice if a method was available to embed some documentation into the file.  Not necessarily for display, but somewhere hidden in the header that could only be read by an application.  If I take a picture at Job site A.  Then I would like to be able to document the pic by adding the: Time, Date, location, conditions ..., Job Number.

All this is a lot simpler than I thought it would be.   My file type is JPG.  What are the limitations on how much text I can enter ?  Are those tags that are there; Title, Dimension, Camera Type, Time & Date, are these standard tags or just tags created by my camera ?  I noticed that if I hit 'Advanced', a lot more properties show up.  Can I edit the file and create my own property ?

It the freeware sw I noted...you can atttach your own file (and format), and add any info you want to it, no limitations on amount of text you want
I looked at the freeware, but that just lets you imbed a file.  I would like to directly add info like rgutwein suggested.  As an extra, I would like to be able to add my own property ?
