making server off line

Dear experts
I have a win 2003 server that runs some applications; I want to schedule my server for a particular time in the night to be unavailable (no one could connect to it). What is the best way to make it off line without disconnecting it from network?

    If you want to make network shares unavailable, the best methods IMHO is to stop Server service.
