What OS should Exchange 2007 be on?<br />
It could be either on Server 2003 or Server 2008 (64 bit)<br />
However do keep in mind that if you want to take backups of Exchange using NTBackup...this will only be possible if Exchange 2007 is on Server 2003<br />
Exchange 2007 on Server 2008 backups would require a third party solution such as Backup Exec of Microsofts DPM<br />
Performance wise Exchange 2007 on Server 2008 is better<br />

Exchange is the server side of a collaborative application product that is part of the Microsoft Server infrastructure. Exchange's major features include email, calendaring, contacts and tasks, support for mobile and web-based access to information, and support for data storage.

Windows Server 2003 was based on Windows XP and was released in four editions: Web, Standard, Enterprise and Datacenter. It also had derivative versions for clusters, storage and Microsoft’s Small Business Server. Important upgrades included integrating Internet Information Services (IIS), improvements to Active Directory (AD) and Group Policy (GP), and the migration to Automated System Recovery (ASR).

Windows Server 2008 and Windows Server 2008 R2, based on the Microsoft Vista codebase, is the last 32-bit server operating system released by Microsoft. It has a number of versions, including including Foundation, Standard, Enterprise, Datacenter, Web, HPC Server, Itanium and Storage; new features included server core installation and Hyper-V.
