Is it safe to call banks over sip/voip? can it be tapped or recorded? i know wireshark can do that, but let's assume that the isp is trustworthy, can the voip provider be trusted? (say, vonage?)

Is it safe? Overall I would say yes, it is not easy to capture and replay these packets.  Infact I would say it is easier to get a butt set and hook up to your phone line and listen to calls on the PSTN then it would be to capture these packets and pull out a conversation.

Here is an article a few years old but explains pretty well.
