Sharing dates for specific users

I want to know, the sharing & security permission date for a specific user on a specific folder

    What Kind of audit and how?

    two methods,

    control panel, admin tools, local security policy, local policies, audit policy, select each type of auditing you wish to accomplish.

    right click on the folder or drive you are sharing, properties, security tab, advanced, auditing tab.
    add a new audit, select the types of access you wish to record.

    I will warn you, this can generate a huge amount of logs if you select everything and if you apply it to a drive or recursively to a deep folder structure or lots of files.

    Also, the auditing you can enable will be after the fact for the event your trying to find information on.
