Outlook 2007 Calendar Invite to Remote Outlook User Seen as Gibberish

Can someone please let me know why one of our Outlook users is having a problem inviting a user at a client company to a meeting?  The calendar invite recipient in the other company sees the invite as an e-mail with gibberish in it.  I know this is BASE64 code but I need to know how to fix the problem.  Is the problem with the recipient's Outlook?  We have Exchange 2007 with all the latest updates consisting of an Edge server, a CAS/HT server and a mailbox server.  All of Outlook users here at our company are on Outlook 2007. Any help in troubleshooting will be greatly appreciated!

I would check the outlook client at the recipient.
I have seen something simillar for simple e-mails sent between 2 companies.

The sender was using Outlook 2007 and the recipient Outlook 2003 at work and Outlook Express at home (via pop3 with a copy on the server).
All the mails that were read on the Outlook 2003 were giberish and when reading on Outlook Express they were ok.
Try telling the recipient to read them trough the OWA before opening them in Outlook.

See also if the recipient has a spam gateway that might do some alteration to the mails or maybe you have an outgoing spam filter that is changing headers of the mail ?
