If I set the logging level for a particular ACL on a PIX to Informational/Level6 for example, and the overall logging level of the PIX is set to just Critical, will those ACL 106100 log entries ever get sent to my external syslog server?

You can set different levels of logging.
Set the ASDM live log to informational
Set the console logging to debug
Set the syslog to critical - nothing from informational will ever be sent to syslog server
