there are so many things which you can try
1. Please check if you are able to get the share of your exchange server start - run - \\exchange server name
2. while configuring the profile please put the globalcatalog servername insted of the exchange server name
3. please let me know if this issue started happening after you installed the outlook 2007 SP2
4. check on the exchange server if you are getting any error related the kerbores
please try all the things and let me know the results

Issue was to do with AD sites and services, replication was not shwing site information correctly.
