Hosting multiple Networks using Citirx

So I see all these companies popping up offering an entire hosted network, so all of my users log in from the web, and they have a virtual desktop as well as virtual file servers and virtual domains.  

I am just curious how they are able to do this , what citrix applications are they running and how are the able to afford the license fees ?  

I also see they offer MS office with it, I can not figure out how they make this cost effective as office is so expensive, can anyone help me with my several questions ?

Without ever doing this myself I'm guessing they are running virtualized servers over VMWare, XenServer, et cetera.  Clients are given a web portal to connect from (customized or generic??).  I'm sure the costs of licensing is tacked in to the payment arrangement, so that over the cost of XX months the client pays for the license.
