Email tracking tasks

Hi Guys

I need to come up with a solution for this

We receive emails everyday, everybody receives a copy, but we do not know who is taking care of what or if it was complete, is there a way that i can track who is taking care and when it was complete.

The solution above may or may not be all you're looking for.  It works though.
Also, it sounds like you may be moving toward the capabilities of a ticketing system, rather than just an email methodology, as you have MS Access as a tag.  I know there are many systems that are able to take inbound emails and convert them to tickets.  From there, you can use workflow rules and assign those tickets based on your specific need.
Please give us some more info, and then the Experts will be better able to answer your question.  What are you trying to accomplish, what's the high-level workflow, what is your desired end result?
