Online maintenance or defrag is set on the store.
it runs even whn the store is mounted. It is usefull to remove the items who have crossed the retention limit.. like emails which the users have deleted etc...
Offline defrag or maintenance is used when the store is dismounted. You use this for removing the white space on the database...

for offline you will have to run the ESEUTIL /D command
