Exchange Journaling Features

We're using exchange journaling to archive our exchange server emails, however there are some emails coming in and going out for some users that we don't want to archive.

is there anyway to do that?

Version of exchange? If 2007, there are number of ways you can archive, like all users (global), internal users only, external users only etc.

You can enable journaling on the mail stores.
http://www.msexchange.org/tutorials/Implementing-Exchange-2003-Message-Journaling.html

Otherwise, you would need to use third party products for more fine grained options.
