The normal way is to sync via iTunes application which i belive you already try.
There is a knowledge base answer on apple site on how to do that
http://support.apple.com/kb/HT1419

However there are also other applications that enable you to sync your itouch.
You can read a step by step guide to do this via Gmail account
http://theappleblog.com/2009/05/13/free-mobileme-alternative-how-to-set-up-google-sync-for-mac-and-iphone/

You can also try mobileme (60 days trial) which create an plugin in control panel that allow online sync with outlook or ical.

If you can be more specific regarding the dificulty that you have i can be more specific.

Thank you,
Ion
