What would be a good hardware configuration for a Dell T300 to be used for testing SBS 2008 on ESXi?

Will the Server run only SBS 2008 under VMware ESXi ?

Dell T300 is officially not supported for installing ESX 3.5 or 3i

In order to install ESXi, you would need a server that has a minimum of 2 physical CPU Sockets.

For the time being that is all it will run.  My intent is to learn the details of managing sbs 2008 in a ESX environment, once that is done the machine will be put to some other un-defined, as yet, use.
