Change default save

I've created shares for all my users and changed the home path in AD, how can I make it so software like office automatically saves to that new location to the whole domain at once?

It depends on the application whether it allows to change the default folder to save in.
The Office programs, luckily enough, belong to the ones that do, and that allow you to configure that using a policy.
Just add the necessary templates to a GPO for your Office users:

Office 2003 Service Pack 3 Administrative Template (ADM), OPAs, and Explain Text Update

2007 Office system (SP2) Administrative Template files (ADM, ADMX, ADML) and Office Customization Tool
