Exchange 2007 room scheduling with Outlook 2003

I am looking to setup Conference Room scheduling in Exchange 2007 running on Windows 2008.
I want to assign resources like projectors to the room.
I have outlook 2003 on the client side.
I have read that only Outlook 2007 fully supports the "room mailbox" schedule.

What is the best way to setup this up with Outlook 2003?
