Can you determine when an email was opened in Exchange 2007?

I have a client who is trying to determine if an email was read by his subordinate yesterday. I've searched around to no avail in finding any info about it, much less if its even possible. Can anyone confirm or deny that these kinds of things are logged with Ex2007?

Not possible.
All you can show is the message was delivered to the mailbox.
Even the read/unread status cannot be trusted as it is possible to read the message in the preview pane without the message being marked as read.

Exchange doesn't and cannot be set, to log to that level of detail. Imagine the size of the logs!

NO. You can't do that in Exchange. Only thing you can have is to request read receipts.
