Changes in Outlook profile not remaining after reboot

I recently moved mailboxes over to a new exchange server and it went well; however, some(about 12out of 400) of the clients's profile is still showing the old server name. I tried changing it and deleting it manually on the individual machines but after the reboot it reverts back to the old server. Where should I begin to reloved this issue.

actually I changed the dns record so that the old derver pointed to the new one anit it worked right away.

I would be inclined to delete the profile entirely and start again. Use the Control Panel -> Mail applet to do this. I took your comment as deleting the account, so if I am mistaken, my apologies.  ... Thinkpads_User
Create a new windows profile and then create a new outlook profile and check what happens
Make sure that the hosts file on the client machine does not have any entries configured for the old exchange server
