Is there a way in Outlook 2007 so see who all I have granted access to my Calendar.  I know how to grant someone access.  How do I remove someones access to my calendar?

If in the left panel, you click on folder list, then right click on Calendar in the folder list. Choose properties then the permissions tab. This shows everyone who has permission on the folder. You can click a name and remove it from here.
