Capturing Mailer Click Throughs

What I need to work out is who clicks on my mailers I send out.

These mailers are like newsletters with links to different parts of my  main site.

The data I need is as follows:
1. What link they click on.
2. There email address (I know this already but will need to link the URL visisted to a email)
3. Time spend on site.

I'm not sure PHP can do this, if not can you suggest what language can.

Really I just need some direction, as I've not dealt with this type of job before.

1. What link they click on.
>> You can set a parameter on link like
http://www.yoursite.com/Counter.php?id=[ID HERE]

Generate an ID for each e-mail, then send out your e-mails. When user clicks on a link, you'll have it's details with given ID. So you can store a lot of information about link, e-mail address, etc.
2. There email address (I know this already but will need to link the URL visisted to a email)
>> As I said above, for each person generate a variable like ID, so you'll be able to track user.
3. Time spend on site.
You can do that with Javascript
