ADSIedit is used to modify active directory objects directly. I consider it akin to being regedit for your entire AD structure.

CN is common name, and usually denotes a leaf object.
OU is an organizational until and denotes a container.

A beginning guide to ADSIEdit can be found at http://technet.microsoft.com/en-us/library/cc773354%28WS.10%29.aspx
Another decent guide is at http://www.computerperformance.co.uk/w2k3/utilities/adsi_edit.htm

in addition to midnight's info.  The CN and OU stuff is used as part of the objects "distinguished name"    You may at times see some application or program ask for the DN or distinguished name of an object.
Decent writeup on how objects are named here:

ADSIEDIT is a direct schema modification tool - if you dont know what it is, then you probably shouldnt be in there touching it :) its your backdoor path to destroying AD.....
