A user left the company. Need to prevent new emails but want to keep his mailbox. (Exchange 2003)

What is best practise when users leave the company?

Want to keep all their emails, but don't want any new emails to arrive for those users.

I know I can export to a pst file and then delete the user in AD, but would like to know about other solutions.

Delete smtp address for that user.
