troubleshooting Question

Looking to Update the Status Field choices in Helpdesk template.

Hi I have a helpdesk template set up for the users. I am trying to update the choices of the predefined fields like status, priority, but have not been able to do that successfully.
Please suggest. Both theses fields are a part of the content type "Service Request"

Also once updated how can we update the KPI's(dashboards to reflect the changes).
