How to update the KPI's in Sharepoint templates

Hi ,
I am looking to update the KPI's in Helpdesk template to include data from newly added / updated fields.Like Average Resolution DataView  time web part needs to derive data from a newly added Date field and/or "Overall Service Request Status"  DataView Part instead of showning all 4 status needs to show just 3.
