Does a Poweredge R710 running Windows 2008 storage server can be used as a SAN ?

Does a Poweredge R710 running Windows 2008 storage server can be used as a  iSCSI  SAN ?  I know Windows 2008 storage is usually sold as an OEM bundle (HP storageworks, Dell NX3000 and so on)  But I don't see why we couldn't use it on any given server, provided that the server is not too old.  After all, the NX3000 is based upon the R710
