Where in SBS 2008 or Exchange 2007 can I forward email to another internal address

with people being laid off, I am asked to forward all mail from a user to another user in the domain. Where in SBS 2008 or Exchange 2007 can I do this. I don't see the tab in Active directory and I have the view set to advanced, and in Exchange under the recipient configuration and then the user, I don't have any options.
