Exchange - C:\WINDOWS\system32\LogFiles
I have a dir on my Exchange 2003 \ FTP \ Web server:
C:\WINDOWS\system32\LogFil es\
That has lots of 'MSFTPSVCx' subfolders that are really huge. Can I purge, remove and then prevent these files appearing in the future?

Sure, if it's not using the current log file it will permit that. If it needs it in future (if you re-enable logging) it will re-create it automatically.

I have now unchecked 'enable logging' on my FTP and default website.
