How do I submit an Infopath 2003 form via Outlook 2007?

Unfortunately it cannot be done.

InfoPath cannot be a different version then Outlook.  IP 2003 can only be used with Outlook 2003 and IP 2007 only works with Outlook 2007.

You either need to sync your Office software or you have to used a server based email solution.  Qdabra.com has one in their web services suite or if you have MOSS 2007 and use browser hosted forms.

Another option is using a coded solution but then that requires full trust forms and coding which is a hassle to maintian and administrate.
