I recently built a Feenas fileserver for our small office. But now I need a way to backup all the files stored on it to a external USB hard drive that I take home every night.... Can anyone suggest a way to accomplish this? Should I just map the Freenas server to a XP computer and use Arconis or some comparable software? Any better suggetsion?

Turn on FreeNAS's rsync server and then use rsync (or deltacopy if your workstation is windows) to rsync the nas box to your USB drive.  I suggest rsync because that way you only have to pull the daily changes over the wire instead of the entire directory structure.  Much faster and not nearly as bandwidth intensive.
