How to prove when a user has opened an email in Exchange

I need to do some forensics for an investigation and see if, and when, a user opened an email in exchange 2003.

You can put read receipts on them but these can be stopped.

There is no way natively of finding out when a message was read that is full proof.

Give yourself full access rights on the required user and check your self via OWA or Outlook if the email is read or unread :)

Cant think of anything else.....

Not really going to help, item could have been marked as unread after Reading.  It also won't tell you when the message was read.
