    set columnName = replace (ColumName, '$', '?' )

    The question is if this is not the character from Windows regional settings used to display money data...

    Let say no. Then I would recommend to use Unicode string for update because some character sets do not support £ sign. And the column itself should support Unicode, of course:

    update tablename
    set columnName = replace (ColumName, '$', N'£' )
    where  charindex('$', columnName) > 0
