What programs and/or services that are available to recover a deleted flat.vmdk file? should i go ahead and format?

Made a sinful mistake yesterday, i accidently deleted a flat.vmdk file on our exchange server.  now the exchange server on a VM machine will not load.  I have consulted with experts from this site and suggested that i rebuild another VM for exchange, load win server, and exchange, and restore from an exec backup 11d backup.

So i am about to load exchange server 03, it is now asking me to format the drive.  I am now hesitating if i should because there might be a simpler solution out there that recovers files from vm machine.  are there any?
