I have no direct answer for you... but do keep in mind that exchange a way more then just an SMTP handler....

SMTP is just the mail transfer agent.
You would also need to select a mail storage system (mail files (sendmail)
maildirs (postfix, qmail, exim, courier) and are way more efficient then mail files)
cyrus mail access system (own database gdb as index, mail is stored like in maildirs).
You need some agent to access the mail (IMAP, CYRUS).  (cyrus, courier, dovecot).
Then exchange also stores agenda's etc. for that you need special mailfolders (cyrus+kolab) or other methods (some use webDAV) to just exchange busy schedules, ical is the agenda data format.   (no real standard way yet)
Same for address books (LDAP..)

So you need to to select some more tools.
May look into the kolab server as you target, that is more or less the package as provided by exchange. its based on postfix, cyrus, ldap en apache fo webmail.
