vmware esxi moving machine

I have a dell poweredge 2850 raid 5 with vmware esxi installed and 3 machines running. Im trying to copy them off using a windows xp pc using the vsphere client on to a usb drive attached to the windows xp with vsphere client on it. I was able to copy 2 machines ok. the 3rd is very large and i keep getting  time out and errors and having to start over. I have tried veaam fast copy and it also errors out. the machine is a critical microsoft 2003 exchange server that i have to get off there. the machine in question runs perfect aand error free.. any ideas to move it. It is gong to moved to new dell server that is being shipped to us.

Download a copy of Veeam FastSCP and use it to copy/paste the VM.  www.veeam.com

If copying does not work for you, you can use the following trick
Install vmware  server/workstation7(eval is fine for temp only) then use vmware converter to do V2V from your esxi to the installed WS7
You can then do a V2V to send it back to the new server once it is ready
