How to enter the organization name when installing SBS2008?

Do anyone know how to enter a different Organization Name for SBS2008 during install. I am trying do so but Windows configures it automatically and gives it a default name "First Organization". I have to change this name the the same Org name of the old server,otherwise I cannot move the mailbox (from Tape bk) to the new server.  In this senario I am using only one server that corrently running SBS2003.  I will be a fresh install of SBS2008.

I very much appreciate your help in this matter.  I am running out of time in order to get this working.

You would have to install Exchange 2007 from the command line to set the org name, or do a custom installation using an answer file. However the answer file is used at the start of the installation of the entire product.

You cannot restore backups from Exchange 2003 in to Exchange 2007. If you want to restore a backup you will have to do so to Exchange 2003 and then extract the information to a PST file.

Thanks very much for you comments thus far.  Are you sure about the restoring?  From what I read, you can restore from a tape if the Org name, admin group and database name is the same.  I would not be suprise if I am wrong, I just want to make sure before I go a different route. 65 gig of email to PST would that not take a very long time?

The information you have posted about restoration is correct - except you have missed one crucial factor - the versions must be the same. The Exchange databases are not cross version compatible.
