how to restrict Software installation with GPO

I have spent the day removing Viruses from Mission Critical PC's and I have decided to lock them down. What I need to know is if I can use GPO to stop users on these computers (3 PC's) installing software? they have their own computers for less important stuff and I dont mind them installing/downloading things on those, but the very important ones that cannot go down should not really be changed at all.

Any ideas would be much appreciated.

As far as I know you cannot prevent users from installing software through GPO. But if you make sure these users are not administrators on the computers they use (make them restricted users), then they will not be able to install applications anyway.
Use www.spiceworks.com solution (free) to administer your network - it can monitor and report if someone installs software on its computer. But as jonathen sais - just restrict permisions (don't give domain or local admin rights).
