Shadow Copies in Microsoft Storage Server 2008

I'm running Microsoft Storage Server 2008 and have figured out basics of shadow copy. My problem is that i want to be able to set the retention time. In other words, I would like to keep two weeks of shadow copies every day, and then at the end of the two weeks, start writing over the oldest copy, therefore having the past two weeks of files at any given time. Anything before that, I would restore from tape if need be. What is the default setting? Can I over-ride it? How is it done?

    Max shadow copies are 64 per volume before it starts over writing automatically. So for 2 weeks (14days), you can have it do a shadow copy every 5 hours.
