How do I move SP2010 databases to another server?

I recently installed SharePoint 2010 on a new 64-bit server and the database got automatically installed on the server with SQL Express.  I want to move the databases to another server that has SQL Server Enterprise Edition, but I can't find any directions anywhere that tell me how I'm supposed to do so.

You are going to have to build out a new SP 2010 environment. You are using SQL Express because you selected the standalone installation. The simplest solution would be to build out a new SP 2010 FARM environment and then backup restore your site collection using the stsadmn -o backup/restore command.

I haven't done anything with the new installation yet, so I can just uninstall and reinstall right?  This time I'll make sure to select Farm, I didn't understand the difference apparently.  Thanks.

Yes you should be able to uninstall and reinstall. Might be better if you started with a fresh clean OS though.
