I need to do a normal backup on Friday and a differential on Monday and Wednesdays do I have to append these or can I just have any olds ones deleted and a new one made.   I am using NT  Backup Windows sever 2003.

A differential backup contains all the files changed since the last full backup. So as long as the job finished correctly you should not need to keep your differentials.

What I really needed to know is this.  I have setup a normal backup and selected the files needed for backup.  Then I setup two diffferential backup with the same files selected one on monday and another on wednesday. I choose to remove any other backups was that the right thing to do?

Choosing to remove any other backups should not cause you any issues. Think of it like this.

The full will run on friday.
Mondays Diff will take anything changed from friday to monday.
Wednesdays diff will take anything changed from friday to wednesday.

So as long as you have a recent diff and the last complete full you should be able to completely restore the data in the event of a disaster.
