Reinstall Windows 2008 Server and choose Standard Edition instead of Core Edition, or whatever edition your licensed to install in a VM. Each physical license comes with a number of virtual licenses.

Windows Server 2008 Standard: one
Windows Server 2008 Enterprise: four
Windows Server 2008 Datacenter: unlimited

SBS is based on Windows Server 2008 Standard, so should allow for one virtual license, but I could not get confirmation on that.
