I would strongly advise installing the File Server role (including the File Server Resource Manager) from Server Manager, as indicated by one of the links above. This gives you much more granular control over quotas than simply enabling quotas at the volume/disk level. You'll be quite surprised what you can do with the management tool - it has much better reporting and allows management of quotas on a per folder basis (rather than per volume).
