The lost connections over wifi can be due to many factors...  not the least of which might be the wireless connection itself.

Personally, I have run a PPTP VPN over a Blackberry tethered as a Modem on G3 and Edge networks and was able to get work done.    It's a little painful at times, but as long as the connection is constant, you should be able to get tasks completed.

Also, bear in mind that when opening documents, the size of the doc will matter alot, especially over slow connections.   A 900 mb file to open would need to get transferred across the link to your workstation before it opens....   This is why many people opt to run a RDC session to a server or workstation instead of opening files across the VPN.   Remote destop sends only screen updates and mouse/keyboard clicks across the VPN as the remote workstation is actually doing all the work....

You are limited to 1 RDC connection by default.   There is a method in 2008 to increase that though....   you can try to replicate on 2003...
