We have the exchange 2007, however when we go to try book appointments with each other, we're not able to see free/busy, where do we enable this in exchange?

Make sure that you could see Schedule +free busy folder under Exchange 2007- Toolbox-Public folder Management-> System Folders.

Then double click on Schedule + free busy folder and then in the subfolders right click-> properties-> and amke sure you have added the self replica here (your own exchange server)

Also go to adsiedit.msc and make sure that the public folders legacyexchangedn attribute is copied and pasted to the sitefolderserver attribute of the administrative group where the exchange server 2007 lies

Is this is an Exchange 2007 transition, if you could elaborate more then it will be easier to provide you a resolution.

After you have done the above steps then run the below command from the workstation where outlook is installed and Schedule+freebusy data is feeded in

My apologies just a small mistake , type error in fast,

Also go to adsiedit.msc and make sure that the public folders Distinguished Name  (Instead of legacyexchangedn ) attribute is copied and pasted to the sitefolderserver attribute of the administrative group where the exchange server 2007 lies.
