Can you have 3 VMWare Host servers pointing to a SAN?

Yes, that's what I'm running at work actually, with about 55 VMs. That's on a fiber SAN, but we've got a similar setup at another office with 3 hosts on an iSCSI SAN.

Just out of curiosity, how many VM's are you running off the 3 hosts with the iSCSI, I have iSCSI right now and on host server.

We just started migrating that office to VMware a couple of weeks ago so they're only up to a dozen or so, but I don't think they'll have a problem putting another 30-40. The limits of how many you can put on the SAN, aside from the obvious disk space issues, is just disk I/O. None of my VMs are really heavy on the disk usage though. There's a couple of SQL servers, but they're not all that loaded down.
Same setup here we are running 3x Dell 2950's attached to an EMC Fibre channel san. We are running approximately 35 guest os's on these boxes and it is running smoothly. We actually have some heavy hitting server running on these 3 computers. Our primary file server used by about 1000 users in the main office, our BES server with about 600 BB devices in use, our main construction management program used by about 500 users.

One piece of advice for you if you havent already chosen your servers. Really juice them up on the RAM.
