Create Custom Toolbar in Adobe Acrobat 7.0 Professional Version 7.0.8

We have Adobe Acrobat 7.0 Professional Version 7.0.8.

I need to create a custom toolbar and put only the buttons I need for a project on it.  Is this something which can be done and if so, how.

Yes, use the Adobe Live Cycle Designer app that came with your pro version. This will help you incorporate custom buttons, images, and logos, and then save as a pdf.
The last comment is off topic.
Unfortunately you cannot do this in Acrobat 7. Starting with Acrobat 8 you can select what you want on your toolbars. You would still not be able to put everything into one toolbar, but you could specify which tools you would have in the different toolbars, and then only add those toolbars with the tools you selected.
You would right-click on the toolbar background and select "More Tools".
