How can I access SSAS 2008 Cube Processing Logs.  

We need to export this log(s) into a text file(s) for history and error tracking purposes

You have two ways:

1. From SSMS use this script to process a cube:

Location of the processing log is placed in <KeyErrorLogFile> node.

The same result you'll have if you change settings in process dialog window: press Change Settings, select Dimension Key Errors tab, select Use custom error configuration and use Browse for setting location for the log file.

2. The second way is to use Profiler. Select Progress Reports events. You can save trace to a file or to SQL Server table.
