I am going to buy a mini mac. It's my first mac coming from the PC world. So in mac I it like a PC the more memory the better? Is 2 gigs enough on a mini?

Yes, the more memory the better, but I recommend getting all you'll need now, mac's are notoriously hard to break into and upgrade.  
I would go right to 4 Gigs.

What would be the mos noticable difference? An also did apple go from 2 gh to 2.5. Ghz dirctly? Or was were differn versions on the middle?

On a mac, you'll really need +2gb more ram, rather than +.5ghz processing speed...
